Green Apple Mignonette on Oysters from Justin Narayan
Ingredients
12 oyster (Sydney Rock)
1/4 Granny Smith apple, finely chopped
1/2 small shallot, finely chopped
1 tbsp coriander stalks, chopped
1/4 cup apple cider vinegar
1/8 tsp white pepper
1/2 tsp salt
Pinch of caster sugar
Method
Place everything into a bowl and mix well. Season to taste. Layer a sheet of foil on to the base of a plate to ensure the oyster doesn’t slip and now generously dress each oyster with your mignonette.
